Pumpkin Chocolate Swirl Bread

Here’s your homework for the day.  Go into your recipe collections and find all the pumpkin spice cake recipes that you have.  Gather them together and throw them the F away…because this Pumpkin Chocolate Swirl Bread is a legit game changer.

Soft and delicious, this pumpkin bread is great for breakfast or dessert.  You can add a sweet cream cheese glaze on top for added richness, or just serve it as is because it’s just that good.

Pumpkin Chocolate Swirl Bread

Ingredients:

  • Non-stick cooking spray
  • 1¾ cup all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, room temperature
  • 1¼ cups granulated sugar
  • 2 eggs, room temperature
  • 1 tablespoon vanilla extract
  • ½ cup milk
  • 1 cup canned pureed pumpkin
  • ½ cup bittersweet chocolate chips, melted
  • 2 tablespoons cocoa or hot cocoa mix (either one will work! It’s mostly for color)

Instructions:

Preheat oven to 350 degrees F.  Coat a 9 in. loaf pan with non-stick spray.  Set aside.

In a medium bowl, combine flour, pumpkin pie spice, baking powder, baking soda, and salt.  Mix together and set aside.

In another large bowl, combine butter and sugar.  Beat with an electric mixer on medium speed until light and fluffy.  If your butter is room temp, you can also beat with a whisk by hand, which is what I prefer…but to each his own!  Add eggs, one at a time, and vanilla, beating well until combined.

Alternate adding flour mixture and milk, starting and ending with flour, and mixing until everything is just combined.  Fold in the pumpkin.

Divide batter in half.  Add melted chocolate and cocoa powder to one portion.  Mix to combine.

Alternate adding pumpkin and chocolate batter to prepared pan.  Using a knife, swirl batters together.

Bake 55 to 60 minutes, or until a wooden toothpick inserted near center comes out clean.  Let cool completely, then remove from pan.

Your kitchen will smell amazing and your stomach will thank me.  And you’re welcome.

If you want to make a cream cheese glaze, you can combine 2 tablespoons softened cream cheese with ½ cup confectioners’ sugar and ¼ teaspoon vanilla extract.  Add 1 teaspoon milk, and continue adding milk little by little until you achieve the right consistency.

12 Decadent Dessert Recipes (with BEER!)

Tis the season for sweaters, pumpkins, scarves, and boots…which means it’s also time for hot apple cider, strong coffee, and tasty stouts and porters.

OOOOOOH YEAH.

I could easily drink stout year-round, but I love it even more in the fall.  Often flavored with chocolate or coffee, stouts are the perfect ingredient to add to chocolate cakes and pies for added depth and flavor.

I’ve used Guinness in my baking before (check out my recipe for Guinness cupcakes!), but there are so many other (and BETTER) stouts and porters to use in your fall and winter baking…

So crack open some cold ones (for baking) and pour some whisky (for drinking) and enjoy these 12 chocolatey, decadent desserts all made with beer.

Mini Waffle S’mores Sliders

You guys…August 10th is National S’mores Day!

I LOVE s’mores.  I’ve made them in the oven, in the microwave, in brownies, cakes, cupcakes, cookies and trail mix.  I’ve made them with Reese’s Peanut Butter Cups (YOU GUYS!), fruit, spicy chocolate, and a whole slew of other weird ingredients.

But in a few days it will OFFICIALLY be s’mores day…which means we can indulge in sweet s’mores without the guilt!

To celebrate, here’s a fun little recipe for tasty s’mores made with mini waffles.  For my chocolate, I actually used s’mores flavored Candy Melts candy…because why the F not?!

These are a quick and easy snack for after school, after dinner, or just for a taste of something sweet!

Mini Waffle S’mores Sliders

Ingredients:

  • Mini Waffles
  • Standard Marshmallows
  • Mini Chocolate Bars (or whatever chocolate you like!)

Instructions:

Toast mini waffles.  As waffles toast, melt a few bars of chocolate.

Once toasted, let waffles cool slightly.  If desired, dip half of waffle in melted chocolate and let harden.

Place marshmallows under broiler for 1-2 minutes.  Watch them closely, especially if you’re using a toaster oven…they’ll brown fast!

Place chocolate bar on waffle and top with marshmallow.  Top with other waffle and dive in!

Sansa’s Lemon Cakes and Daenerys’s Dragon Egg Truffles

WINTER IS (almost) HERE.
OMG!  OMG!  OMG!

Season 7 of Game of Thrones premiers next weekend and I could not be more excited!  Every preview I’ve seen has been better than the last…and with the series wrapping up next year, things are about to get ca-RAY.

To help get us all in the mood for the GOT premier on Sunday, we’re going to be celebrating Game of Thrones all week this week!

To kick things off, we’re going to celebrate two of the leading ladies of GOT:  Sansa Stark and Daenerys Targaryen.

A few weeks ago, we had a little engagement party for my sister and her fiance.  To go with their theme of epic nerdiness, we had amazing decorations and food that all catered to their favorite nerdy things.  Bertie Bott’s Every Flavor Beans, Pokemon popcorn, even a handmade IRON THRONE that my aunts made were all part of the epic celebration!

So my contribution to the party was the sweet table…and to pay homage to Game of Thrones, I included Sansa’s famous lemon cakes, as well as spicy chocolate truffles, decorated to look like Daenerys’s dragon eggs.

I had a few requests for recipes, so here they are!  The Lemon Cakes are from Rosanna Pansino, and the recipe for those is linked below.  The truffles were my own creation and you can find that recipe at the bottom of the post!

Sansa’s Lemon Cakes Recipe

These lemon cakes were made using Rosanna Pansino’s Lemon Cake recipe on her channel, Nerdy Nummies.  The recipe is written out in the description of her video.

Daenerys’s Spicy Chocolate Dragon Egg Truffles

Ingredients:

  • 2/3 cup heavy cream
  • 12 oz. dark chocolate, chopped (keep it around 60% cacao)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon chili powder
  • 1/8 teaspoon cayenne pepper
  • White fondant
  • Green fondant
  • Brown fondant

*If you don’t want to make these spicy, just eliminate adding the spices.

Directions:

In a medium sauce pot, heat the cream and spices over medium-low heat until it comes to a simmer.

Place chopped chocolate in glass bowl.  Pour hot cream over chocolate, shaking bowl slightly until all the chocolate is covered.  Let sit until chocolate is semi-melted, about 5 minutes.

With a spoon or silicone spatula, mix the chocolate until everything is combined.  Cover with cling wrap.  Chill until chocolate is set, about 2 hours.

In the meantime, roll out any color of fondant (white, green or brown).  I suggest going from light to dark so your white fondant stays white.

Roll out white fondant to about ¼ in. thickness.  To cut out the scales, I used a tiny diamond cutter, originally meant for clay.  You can also cut out your pieces by hand…whatever works for you.

Cut out a bunch of scales in each color…like, a bunch.  Like, cut as many as you think you need, then cut more.  I think I averaged about 20-40 scales per truffle.

Once your chocolate as set, take it out of the fridge for about 20 minutes.  Using a spoon or a small ice cream/cookie scoop, scoop out your truffles.  Roll them into a ball first, then shape them into a flat egg (like a Reese’s egg at Easter) and place on a parchment paper-lined baking sheet.

Work quickly, as the heat from your hands will melt the chocolate.  I rinsed my hands with cold water after every 2 or 3 truffles I made.

Once your chocolate is shaped, just add your scales.  Starting at the narrow end, add one scale in the top center…then just layer the scales all the way down the truffle until it’s covered.  The fondant should stick to the chocolate pretty easily, but you can use a little dab of water if it’s not sticking.

Put truffles back in the fridge to harden up a little bit and then serve!

Lez be honest…summer is the worst sometimes.  Here in Chicago, we’ve been pushing temperatures north of 90 degrees F even AFTER THE FREAKING SUN GOES DOWN.  Sure, with an amazing air conditioning system, summer can be a breeze for us Midwesterners…but for those of us getting by on one tiny air conditioner that doesn’t cool any room in the house except the room it’s in, well, summer sucks.

Because my kitchen is in the back of my apartment, it hardly ever gets cool air from the air conditioner, so cooking in the summer is usually a ton of salads and dinners spent in air conditioned restaurants…and when it comes to dessert, the oven RARELY goes on in the summer.

Thankfully, there are a ton of delicious no-bake summer desserts that can quench your sweet-tooth without heating up your kitchen.  Cool, refreshing, and often infused with alcohol and fruit, these no-bake summer desserts are a great way to cool off without heating up your house.

11 Magical Unicorn Treats

A few years ago I took a very reliable, 100% true-to-fact quiz online to find out the identity of my spirit animal.  As I entered the magical forest, I waited for my spirit animal to approach…I was hoping for something awesome like a wolf or a bear…but when I clicked, I was so amazed to discover that my spirit animal was none other than the unicorn!

Pistachio Ice Box Cake

What is it about that artificial pistachio flavor that just tastes so freaking good?  Pistachio ice cream…pistachio cake…pistachio pudding…you’d think the toxic neon green color might deter me, but no.  I love me pistachio flavored anything.

And this Pistachio Ice Box Cake is no exception.  A play on the popular Watergate Salad (another guilty pleasure that I can just eat with a wooden spoon while sitting in my pj’s on my couch watching Gossip Girl), this cake combines only a few ingredients to create a tasty n0-bake summer treat that’s great for, well, anything!

As is custom with most ice box cakes and pies, this treat gets better the longer it sits.  Since it’s made in a small pan, it doesn’t make many servings, so plan ahead if you plan on making this for a party.  However, because this recipe is pretty simple and VERY budget friendly, this is a great party treat if you double the ingredients and use a larger 9 in. x 13 in. pan instead.

Pistachio Ice Box Cake

  • 2 (3.4 oz) packages instant pistachio pudding
  • 2¼ cups cold milk
  • 16 oz. frozen whipped topping, defrosted
  • 18 to 20 graham crackers
  • Chopped pistachios for decorating

 

Directions:

  1. Like an 8 in. x 8 in. pan with plastic wrap. Set aside.
  2. In a large bowl, whisk together pudding and milk until combined. Refrigerate 5 minutes.
  3. Fold 8 oz. whipped topping into pudding until combined.
  4. Place one layer graham crackers in prepared pan. Top with half of pistachio pudding. Repeat layers, ending with a layer of graham crackers. Top with remaining 8 oz. whipped topping. Top with chopped pistachios.
  5. Refrigerate overnight.
