30 Classic Recipes You Need in Your Wheelhouse

I think it’s fair to say that everyone has a chocolate chip cookie recipe or a pancakes recipe tucked away in their recipe binder.  Maybe it was mom’s or grandma’s…or maybe it’s just a recipe from Pinterest that ACTUALLY WORKED.  Regardless of where it came from, having a few classic recipes in your wheelhouse is never a bad idea.

Though I love cookbooks and collecting recipes, I actually really like to be creative in the kitchen.  A dash of something here, a sprinkle there…you never know what just might work!

I know this can be stressful for some folks…but seriously, if you have the staples down pat, you really can have fun adding in different textures and flavors…I mean the worst thing that happens is you just order Chinese, right?

So, as my mother would say, “put on your big girl pants!”.  These classic recipes are great to have in your back pocket in case you find yourself entertaining a crowd or needing to cook up a last-minute meal.

13 Delicious Recipes for Christmas Morning

Ever since I was a little girl, I’ve loved Christmas morning.  The smell of pepper bacon and cinnamon rolls, hearing my dad’s Christmas music and gathering with my family in our PJ’s…those memories are some of my favorites ever and I can’t wait to have similar memories with my children.

Through the years, we’ve varied Christmas morning breakfast a little bit, but there are a few things that are REQUIRED.  First of all, pepper bacon.  Not that crappy processed bacon.  I’m talking real thick-cut bacon from the butcher sprinkled with freshly ground black pepper.  It will change everything.

Second, cinnamon rolls.  None of us even really like cinnamon rolls, but the smell of them is always what woke us up on Christmas morning.

Third…cookies.  My dad was a cookie connoisseur.  Gingerbreads, peppermint swirls, fudge, petit fours, homemade toffee…it was an indulgent platter of sweet bites.

Once those three things were covered, anything else was fair game.  Roasted potatoes, bagels and shmear, casseroles.  As long as it was high in carbs and starch, it was a contender for Christmas morning!

Now that my dad has passed on, my sister and I are trying to continue the tradition with our families.  Of course, we’ll have the staples, but here are a few new recipes I’m adding to the list of possibilities to try out this year.

50 Recipes, 50 States, 1 Very Hungry Blogger

A few weeks ago, I tried Nashville Hot Chicken for the first time. I have been to Nashville before and never heard of it…it took a trip to a local chain restaurant to learn about this amazing, comforting, soul-southing dish that would eventually inspire today’s blog post (it was The Yard House, if you’re curious! If there’s one by you, I highly suggest trying it). I mean, look at this. LOOK AT THIS DISH. Hot chicken, sweet potato pancakes (which could be a meal just by themselves)…this is happiness. Pure happiness.

So today’s post is mostly inspired by the discovery of this Nashville delight, as well as a game my dad and I talked about playing several times (but actually never did…but I’m bound and determined to do it with my kids!).

So here’s what ya do. Get a map of the United States (or the world for adventurous eaters!)…like, a big one. Big enough to cover your kitchen table. Then use dice, a penny, or any small object you and your kids can easily toss and use the state or country it lands on to inspire your cuisine. Isn’t that fun?! It’s a great way to travel without spending a ton of money and a fun and clever way to introduce kids to new flavors and cultures.

The Irondale Cafe, located in Irondale, Alabama was the inspiration for the Whistlestop Cafe in the film, Fried Green Tomatoes...and just like in the film, the Irondale Cafe is still known for whipping up some awesome fried green tomatoes.

Alaska:  Roasted Maple Salmon
Salmon can be found almost anywhere along the coastlines of the United States, but no state gets better, fresher salmon than Alaska.  With natives who have created unique and flavorful recipes that you can’t find anywhere else (salmon candy, anyone?) There’s a running joke that Chicago people don’t eat deep dish…only out-of-towners who come to Chicago for the first time.  I am living proof that this is not true.  I’m a born and raised Chicagoian who loves deep dish, but it’s not for everyone.  More like a pie with a thick crust and lots of sauce, this pizza is not for the faint of heart!  But it is a tasty treat that takes me home every time I eat it!

Indiana:  Creme-Filled Doughnuts
Indiana is home to tons of doughnut shops (I WANT TO GO TO THERE) with each shop claiming they have the best doughnuts in town.  Skip all the drama and make your own at home!  Best of all, your kitchen is going to smell amazing!

Iowa:  Pork Tenderloin Sandwich
Iowa is true farmland…and pork is abundant here in the midwest.  Fry it up and serve it on a bun and you’ve got yourself a midwestern staple that is comically satisfying (I mean look at the size of that meat).

Kansas:  Kansas BBQ Chicken
Every southern state wants to make their claim to delicious BBQ…and every one of those states has their own style.  Kansas style is sweet and spicy and great on chicken.  Make your own Kansas BBQ sauce and see if you can go back to the dry rubs of Texas!

Kentucky:  Hot Brown Sandwich
Born at the Brown Hotel in Louisville, Kentucky, this sandwich features turkey, bacon, and Mornay sauce, a Bechamel sauce made of Gruyere cheese.  Served on a piece of crispy bread, this is stick-to-your-ribs comfort food right here.

It’s no surprise that the French had a large influence on Louisiana…and these light and fluffy beignets are a product of this influence.  Pieces of dough are fried up and covered…COVERED…with confectioners’ sugar and served up nice and hot.

Whether you call it chowda’ or chowder, there’s no denying that Massachusetts is home to come of the best chow on the planet.  Often served with potatoes and bacon, this soup will warm your insides on those cold northeastern winter nights.

Michigan:  Easy Beef Pasties
Containing meat, a veggie, and potatoes all in one pastry, the Michigan pasty really is a meal all in itself.  Originally used by miners and laborers as a way to essentially eat on the job, these meals are hardy, filling, and comforting.  You can find authentic pasty shops all over Michigan, particularly in the northern parts of the state.

Minnesota:  Minnesota Hot Dish
If Fargo taught me anything, it’s that Minnesota does not mess around when it comes to winter blizzards.  Since weather in Minnesota can be very sketchy, sometimes people are stuck with making a casserole from whatever is on-hand…thus, the Minnesota Hot Dish.  Often served with hash browns or tater tots, this is one casserole that will satisfy every guilty pleasure.

Mississippi:  Mississippi Mud Pie
Chocolate lovers rejoice!  This ooey gooey pie is a slice of heaven.  Thought to have originated in Mississippi, this pie often is served with ice cream and is the perfect ending to a light summer meal.

Missouri:  Toasted Ravioli
St. Louis holds claim on the creation of toasted ravioli.  A delicious appetizer or snack, toasted ravioli is often made with cheese-filled pasta, seasoned and baked and served with fresh marinara sauce.

Montana:  Huckleberry Buckle

Nebraska:  Classic Ruben
Thought to have come from Omaha, the Ruben is a popular sandwich consisting of corned beef and sauerkraut.  Often grilled on buttered rye bread, this sandwich can be found in several restaurants across the country…but a homemade one is always best!

Nevada:  Shrimp Cocktail
Though Nevada doesn’t have a traditional food, the shrimp cocktail is somewhat symbolic of the Vegas culture.  A great appetizer or light dinner, the shrimp cocktail can be as simple or as elaborate as you’d like it to be!

New Hampshire:  Slow Cooker Apple Maple Pork Tenderloin

Kuchen comes from the large German influences in North Dakota.  You can make it with almost any fruit you’d like, and every Dakota grandma has her own go-to recipe.  Served in bar form or as pie slices, this dessert is a Dakota claim to fame.

Part of the state meal of Oklahoma (yes, that’s a real thing), fried okra is a southern favorite.  Sometimes battered and fried, sometimes stuffed and battered and fried, because–why not?–fried okra makes a great side dish if you can find it in your local grocery store.

Oregon is home to several amazing breweries, making these beer marinated drumsticks a wonderful taste of the west coast.  Serve with an ice cold IPA for a true Portland experience.

Blueberry Muffin Cake

Blueberry Muffin Cake

Ingredients:

Topping

  • ¼ cup sugar
  • ½ cup brown sugar
  • 1/3 cup plus 3 tablespoons all-purpose flour
  • ¾ teaspoon ground cinnamon
  • ¼ cup plus 2 tablespoons butter, room temperature

Cake

  • 2 cups plus 1 tablespoon (reserved) all-purpose flour
  • ¾ cup sugar
  • ¼ cup butter, room temperature
  • ¾ cup milk
  • 1 egg
  • 2½ teaspoons baking powder
  • ¾ teaspoon salt
  • 2 cups fresh blueberries

Glaze

  • ½ cup powdered sugar
  • ¼ teaspoon vanilla
  • 1 teaspoon milk

 

Directions:

  1. Preheat oven to 375 degrees F.
  2. Spray 9 in. round pan with non-stick spray. Set aside.
  3. In a medium bowl, combine crumb ingredients. Use pastry cutter to combine. Set aside.
  4. In a large mixing bowl, combine butter and sugar. Add egg. Alternate mixing in flour (reserve that 1 tablespoon for later) and milk, finishing with milk. Add baking powder and salt. Mix until mostly smooth.
  5. Sprinkle 1 tablespoon reserved flour over blueberries and toss to coat. This will help keep berries suspended in the cake. Fold berries into cake batter.

  6. Spread batter into prepared pan. Top evenly with crumb topping.
  7. Bake 40-50 minutes, or until toothpick inserted in center comes out clean.

  8. Allow cake to cool 15 minutes in pan. Carefully remove and let cool completely on cooling grid.
  9. Once cooled, mix ingredients for glaze. Drizzle on top of cake.

Banana Nut Muffins

I think I’m in a vast minority when I say that I love my bananas unripened. I love them with a little touch of green on the skin and practically no “mush” when I bite into it. Once the banana has ripened and gotten mushy, it’s time to make banana bread…or in this case, banana nut muffins!

This is a delicious recipe that makes a little over a dozen muffins. You can use walnuts or pecans here, or be adventurous with some mini chocolate chips!

Ingredients:

  • 2 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 1 tbsp baking powder
  • 4 tbsp butter 
  • 1/2 cup chopped walnuts 
  • 3 small, ripe bananas 
  • 2 eggs 
  • 1/3 cup milk 
  • 1 tsp vanilla
  • Cinnamon

Instructions:

  1. Preheat oven to 425 degrees F. Butter a 12 muffin baking pan or line it with muffin liners.
  2. In a large bowl, mix flour, sugar, and baking powder. Using a pastry blender cut in butter until mixture resembles coarse crumbs. Add the walnuts and stir.
  3. In a mixer bowl, add the bananas, milk, eggs and vanilla and mix for a few seconds. Add the banana mixture to the flour mixture and using a spatula mix everything until flour is moistened, but don’t worry the batter will be lumpy.
  4. Spoon the muffin batter equally into the muffin cups. Top with cinnamon and extra walnuts, if desired.
  5. Turn down the oven to 400 F degrees and place the muffins in the oven. Bake them for about 25 to 30 minutes, or until golden brown.

Cranberry, Orange and Almond Breakfast Cake

This past Sunday, I woke up to a cold and blistery day. The wind was howling at 40+ miles an hour and large rain drops were pounding on the windows. Since it was a rare lazy Sunday when I didn’t have anything to do, I decided to whip up a nice breakfast cake to start the day off right.

I had some cranberries in my freezer from Christmastime and thought it was about time I put them to use. I also had some oranges and almonds left over from other baking adventures, and flipped through my recipes to find the perfect way to marry all these things together.

I finally landed upon a recipe for this Cranberry, Orange, and Almond cake that I saved in my files years ago. As I was making it, the smells of orange and vanilla fumigated my whole kitchen, and I couldn’t WAIT for this cake to come out of the oven!

This cranberry cake is filling enough to be served for breakfast and sweet enough to be served as a dessert. The cranberries burst with a delicious tartness that’s matched with the sweetness of the orange…and it goes perfectly well with a cup of tea, a good book, and a rainy Sunday morning.

Cranberry, Orange, and Almond Breakfast Cake

Ingredients:

  • 1 cup sliced raw unsalted almonds
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons light brown sugar
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 cups sugar
  • 3/4 cup regular butter, melted and cooled (a stick and a half)
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Juice of 1/2 an orange
  • 12 oz. fresh or frozen cranberries (1 1/2 cups)

Directions:

  1. Preheat oven to 300 degrees F.  Grease a 9×13 pan with non-stick cooking spray.  Set aside.
  2. Combine almonds, 2 tablespoons butter, and brown sugar in a bowl.  Mix to combine.  Place in refrigerator until ready to use (this is the topping to your cake).
  3. Combine the flour, baking powder, and salt in a bowl.  Mix to combine.
  4. Beat eggs and sugar in a large bowl on medium high speed until mixture is lighter in color and has increased in volume, about 5 minutes.
  5. Turn mixture to low and slowly add butter.  Turn mixture to medium speed and beat for 2 minutes.
  6. Add vanilla, zest, and orange juice and mix to combine.
  7. Slowly fold in half of the flour mixture into the egg and sugar mixture.  Once it’s combined, fold in the rest of the flour.
  8. Dust cranberries with 2 tablespoons flour, if desired.  This will help suspend your cranberries in the cake so they don’t sink to the bottom.  Once they’re lightly coated, fold them into the cake batter.
  9. Pour batter into your prepared pan and top with the refrigerated almond mixture.  Bake on middle rack for 1 hour, or until a toothpick inserted in the middle of the cake comes out clean.  If your cake looks done around the edges but still needs to cook because the batter is wet in the middle of the cake, simply cover the cake with aluminum foil and let bake for an additional 20-25 minutes, or until your cake is done.
  10. Let cool 10 minutes before serving.

14 Tips for Brewing Tea and Coffee

If you’re going to take the time out of your day to enjoy a nice cup of tea or coffee, make sure you keep these helpful suggestions in mind so you can brew up the perfect cup of whatever you like to drink!

Tea Brewing Tips:

When using loose tea leaves, it’s important to keep a few things in mind. Everything from the water you use to the steep time will effect the taste of your drink, so use these guidelines to create a beverage that suites you “to a tea”!

Start with fresh, cold water: The best tea is only as good as the water with which it is prepared. Try using filtered or bottled spring water with a natural mineral content. The freshness of the water is important as fresh water contains more oxygen, which enhances the taste of the tea. Never use hot tap water or water that has already boiled for a long time as this will result in a flat and dull tasting tea with little aroma.

Preheat the teapot: It is important to preheat the pot or cup in which the tea will be steeped. If hot water is poured into a cold vessel, the temperature of the water will drop too quickly and the full flavor of the tea will not be extracted. To preheat the pot: pour a little of the boiling water from the kettle into the pot and then pour this water off into the drinking cups to warm them.

Measure the appropriate amount of dry leaves: Ideally, 3 grams of dry leaves should be used for every 6 ounces of water. If you don’t have a scale, try starting with one rounded teaspoon of dry leaves for each 6-ounce cup. With lighter weight teas such as large, wiry oolongs and whites, try 2 teaspoons per 6 oz cup.

Select the right water temperature: Black, Dark Oolong, and Herbal Teas are best prepared with water that has come to near boiling. Don’t let the water boil too long or the oxygen content will be reduced and the tea will taste flat. Green, White, Green Oolong teas should not be prepared with boiling water as this will cook the leaves and destroy their flavor. Japanese greens tend to taste best with water at 170-180º F. China green teas tend to taste best with water at 185º F. Generally, the finer the green tea, the lower the water temperature should be.

Steep time: The time it takes for tea to brew depends on the leaf size. The smaller the leaf, the faster the tea infuses. When you’re experimenting with new teas, let your leaves steep for 2 minutes, then taste your tea. When the tea tastes right, serve or pour off all the liquid to avoid oversteeping. Here are some general guidelines:

Japanese Green Teas: 1-2 minutes
Chinese Green Teas: 2-3 minutes
White Teas: 2-5 minutes
Green Oolong Teas: 2-3 minutes
Dark Oolong Teas: 3-5 minutes
Black Teas: 3-5 minutes
Herbal Infusions: 5-10 minutes

When your tea is done steeping, immediately remove the loose tea from the strainer or the tea bag and lightly stir. Then serve while fresh and hot. If your tea gets too cool, it is best to enjoy it over ice verses re-heating the brew.

Coffee Brewing Tips:

Similar to tea, the perfect cup of coffee begins with using clean water and proper water to coffee ratio.

Start with good water: Like tea, the best coffee comes from mineral content water. The absence of some minerals can lead to bitter tasting coffee, so avoid using distilled water when you brew.

Good quality coffee: Obviously the quality of the coffee you’re using matters when brewing the perfect cup of joe. Also, make sure you store your coffee properly. Oxygen is one of coffee’s biggest adversaries, so keep your beans in an air-tight container to ensure freshness.

The size of the grind: A finer grind means more surface area of the bean is exposed to the water. For a brew method that uses a longer dwell time such as French Press, a coarser grind is necessary. An even grind of any size is ideal, so follow the directions on your grinder.

Use clean equipment: Old sediments easily make for rancid flavors in your coffee. A good rule of thumb is to clean your equipment if you notice or smell any odor. If you can’t remember the last time you cleaned it, it’s probably time to clean it again.

Portion control: The official recommended proportion is 2 tablespoons for every 6 oz of water. If this ratio to strong for you palate you could back it off to 2 tablespoons for every 8 oz of water but any less than this puts you at significant risk for under extracted, watery and thin coffee.

Beans are best: Always purchase whole bean coffee (never pre-ground), and grind just prior to use. Yes, this is an inconvenience compared to buying pre-ground, but it is an absolute must if you want to end up with a tasty cup. Home coffee grinders are very inexpensive and can be found at most department and kitchen/home stores.

Coffee Cake Muffins

First of all, I want to wish everyone a very happy, healthy, and prosperous NEW YEAR!!! I can’t believe we’re at 2013 already!

As a little treat for you before we all start our resolution to eat less and exercise more, here’s a recipe for some delicious coffee cake muffins. These muffins are great for New Year’s morning, since they’re super easy to make and cook up quickly.

If you don’t have buttermilk on hand, you can make “sour milk” by combining 1 tablespoon vinegar or lemon juice with 1 cup of milk. Just put 1 tablespoon of your acid in a measuring cup and add enough milk to make 1 cup. Since this recipe calls for 1/2 cup milk, you’d obviously add 1/2 tablespoon acid to 1/2 cup milk. I actually used the vinegar/milk combo in the muffins I made and you couldn’t taste the vinegar at all…so don’t worry about ruining the taste of the muffins!

Coffee Cake Muffins:

Ingredients:

  • 3 tablespoons all purpose flour
  • 3 tablespoons brown sugar
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons butter
  • 3 tablespoons chopped walnuts
  • 1 ½ cups all purpose flour
  • ½ cup granulated sugar
  • 1 ¼ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup butter
  • 1 beaten egg
  • ½ cup buttermilk (or “sour milk”…see above)

Instructions:

  1. Prepare muffin tin and set oven to 400 degrees F.
  2. For topping, in a small bowl stir together the 3 tablespoons flour, brown sugar, and the ¼ teaspoon cinnamon.  Cut in the 2 tablespoons butter until mixture resembles coarse crumbs.  Stir in nuts; set topping aside.
  3. In a medium bowl, stir together the 1 ½ cups flour, sugar, baking powder, the ½ teaspoon cinnamon, ginger, baking soda, and salt.  Cut in the ¼ cup butter until mixture resembles coarse crumbs.
  4. In another bowl combine egg and buttermilk.  Add egg mixture all at once to flour mixture and stir, just until moistened (batter will be lumpy).
  5. Spoon half of the batter into the prepared muffin cups, filling each one-third full.  Top with half of the topping, the remaining batter, and the remaining topping.  Bake in oven for 15-18 minutes, or until golden brown.  Cool in muffin cups on a wire rack for 5 minutes.  Serve warm.
